Citrus Salad with Honey Vinaigrette

If you're following along on my YouTube channel, you'll see that today's episode is all about salad!  This citrus salad is inexpensive but packed with flavor.  Use any greens you like to accompany the bright citrus that is mellowed out with a sweet and tangy honey vinaigrette.  It's a perfect side dish to bring to a party, make for simple lunches or to impress your guests. Recipe below....

Citrus Salad with Honey Vinaigrette

Hangry Timer: 20 minutes

What you Need:

1 Red Grapefruit
1 White Grapefruit
1 Naval Orange
1/4 Red Onion, thinly sliced
1 lb. Frisee (or any other green you like)
1 TBSP Cilantro Leaves
1 TBSP Mint Leaves
1/4 Cup Reserved Citrus Juice
1 TBSP Sherry Vinegar
1/2 tsp. Honey
1/4 cup Olive Oil
Squeeze of Lemon
Salt
Pepper
 

What To Do With It:

Supreme the citrus and squeeze the remaining juice from the discarded fruit into a bowl (watch the below video on how to do this).

Combine citrus, onion, salad greens, cilantro and mint into a bowl.  Toss gently.

For the vinaigrette use a jar to combine reserved citrus juice, vinegar, honey, olive oil, salt and pepper.  Shake until emulsified and finish with a squeeze of lemon. 

Keep the salad and vinaigrette in the refrigerator until it's time to serve.  Top the salad with the vinaigrette and a pinch of salt and pepper.
