Addicting Appetizer

The very first appetizer I created at my debut catering gig in 2010 was bacon wrapped scallops -- my way.  I stuck with classic Maryland-style flavor combinations, while allowing the delicate scallop to shine.  Have I mentioned I was born and raised in Frederick, MD?  Now you know.  The best part is that these hors-d'oeuvres can be made in advance, so you can enjoy the party with your friends and pop these in the oven when your guests start to get hangry!

BBQ Bacon Wrapped Scallops

Cost: $20
Feeds: 20

What You Need:

2 lbs. Large Diver Scallops, quartered
¼ Cup Old Bay seasoning
1 lb. Bacon
½ Cup Barbecue Sauce, (I like Sweet Baby Ray’s)
1 Tbsp. Freshly Cracked Pepper
Toothpicks

What To Do With It:

Quarter scallops into four bite-size pieces and dust with Old Bay seasoning.

Lay strips of bacon on a baking sheet lined with parchment paper.  Brush the top of the bacon with BBQ sauce and sprinkle with pepper.

Starting from one end of the bacon, wrap the scallop pieces one time around with the bacon and snip the bacon with kitchen scissors so that the ends of the bacon slightly overlap.  Secure the bacon together with half of a toothpick.

Once all scallops are wrapped, brush each one with a little more BBQ sauce.*

Transfer the prepared scallops to a baking sheet fitted with a rack and lined with foil or parchment paper.**

When you’re ready so serve the scallops, turn the oven to medium broil and broil the scallops on the top rack for 8-10 minutes until the bacon is cooked.

Transfer the scallops to a platter drizzled with more BBQ sauce and serve to your friends!

Note: You can make the scallops a day ahead and keep them covered in the fridge until party time.

 *Hangry District Tip: Make sure to cover the toothpick in some BBQ sauce so it doesn't catch fire.
**Hangry District Tip:  If you don't have a rack for your baking sheet, don't worry - just be sure to drain the fat off of the scallops onto a paper towel lined plate before you serve them!
